An Ode to Burrata
As a Greek, I am ever so thankful to the Italians for their burrata. There is something so satisfying about cutting the center with a knife and seeing all of the delicious ricotta pour out. I am confident enough so to say it is in my top 3 favorite delicacies to eat with pasta. Paired with an Asti Spumante, it makes for a romantic, candlelit dinner. I always add tomato sauce and garnish it with capers, or olive brushetta, and pair it with a side salad.
