Seven years ago when I was in Greece, I met a nutritionist who recommended a healthy recipe: pasta with greek yogurt and feta cheese. This is not a typical Greek dish. I thought the combination sounded strange, and I am not a fan of Greek yogurt on its own, but I fell in love with it the moment it met my mouth. It is very simple and so easy to make. She recommended that I eat it with flat egg noodles (which is the tastiest way) but it is just as amazing with regular spaghetti. I always boil my pasta al dente and add salt to the pasta water. After I drain the spaghetti, I coat it in extra virgin oil as well as the bottom of the pot so it doesn’t stick. I add some salt, distribute everything evenly and it is done. Tonight I used a vegan Greek yogurt from Trader Joe’s as a replacement, which basically tastes the same. Sometimes I like to eat more plant-based. You can garnish it with black pepper and parsley. I aways eat my pasta with a salad, and I made one with arugula, beats, olive oil and raspberry balsamic vinegar.
